Here's a recipe for Puran Poli:
Ingredients for Puran (Sweet Filling):
- 1 cup chana dal (split Bengal gram)
- 1 cup jaggery, grated
- 1/2 teaspoon cardamom powder
- A pinch of salt
- Ghee (clarified butter) for cooking
Ingredients for Poli (Outer Dough):
- 1.5 cups whole wheat flour
- A pinch of salt
- Water as needed
- Ghee (clarified butter) for cooking
Instructions:
- Wash the chana dal thoroughly and soak it in water for about 2-3 hours.
- Drain the water and pressure cook the soaked dal with fresh water for 3-4 whistles or until it becomes soft and cooked.
- Once the pressure releases, drain any excess water and mash the dal using a spoon or a masher until it becomes smooth.
- Heat a pan on medium heat and add the mashed dal to it.
- Add grated jaggery, cardamom powder, and a pinch of salt to the pan. Mix well.
- Cook the mixture on low heat, stirring continuously, until the jaggery melts and the mixture thickens. This should take around 10-15 minutes. Make sure there is no excess moisture in the mixture.
- Remove the mixture from the heat and let it cool down.
- Once the mixture is cool, divide it into small lemon-sized balls and set aside.
Preparing the Poli Dough and Assembling:
- In a mixing bowl, combine the whole wheat flour and a pinch of salt.
- Gradually add water to the flour and knead it into a soft and smooth dough. Add water as needed to achieve the desired consistency.
- Cover the dough with a damp cloth and let it rest for 30 minutes.
- After the resting time, divide the dough into small lemon-sized balls.
- Take a dough ball and roll it into a small circle using a rolling pin, dusting some flour to prevent sticking.
- Place one ball of the sweet filling (puran) in the center of the rolled dough.
- Carefully bring the edges of the dough together and seal it, ensuring that the filling is completely enclosed.
- Gently flatten the dough ball with your hands.
- Dust some flour on the rolling surface and roll the dough ball into a circular shape, similar to a roti or chapati.
- Heat a tawa or griddle on medium heat and place the rolled puran poli on it.
- Cook one side until small bubbles appear on the surface, then flip it over.
- Spread ghee on the cooked side and cook the other side until both sides are golden brown.
- Remove from the heat and repeat the process for the remaining dough balls.
- Serve hot Puran Poli with a dollop of ghee or milk.
